Roasted Rosemary Sweet Potatoes

Ingredients

  • 2 lb Sweet potatoes, peeled and cut to a medium dice
  • 2 tbsp Fresh Rosemary, roughly chopped, plus more or less as needed to taste
  • 1 tsp Kosher salt, plus more as needed to taste
  • 1 tsp Ground black pepper, plus more as needed
  • 1/4 cup Extra Virgin Olive Oil
  • 1/4 cup H-E-B Honey & Butter Cooking Sauce, plus more as needed
  • 1/2 cup Boar's Head Grated Pecorino Romano All Natural Cheese

Instructions

  1. Preheat oven to 400ºF.
  2. In a bowl, toss together potatoes, rosemary, salt, pepper and olive oil.
  3. Place on a sheet pan lined with parchment paper, roast for 30 to 40 minutes, or until nicely browned.
  4. Transfer potatoes to a bowl, while hot toss with honey butter sauce. Garnish with cheese, and season to taste as needed.
