Roasted Olive and Tomato Vinaigrette

Ingredients

  • 4.5 oz Castelvetrano Olives, drained
  • 8 oz Sweet Tomatoes
  • 2 Medium fresh garlic clove, peeled
  • 1 cup Rustico Olive Oil, plus 1 Tablespoon for roasting
  • 3/4 tsp Kosher salt
  • 1/2 tsp Ground black pepper
  • 1 tbsp Fresh Italian parsley, rough chopped, stems removed
  • 2 tbsp Champagne Vinegar

Instructions

  1. Preheat oven to 450ºF. In a small bowl toss together olives, tomatoes, and garlic with 1 tablespoon of olive oil. Place on a parchment lined baking sheet and roast 10 minutes until slightly charred.
  2. Place tomato olive mixture in a blender and add salt, pepper, parsley, and vinegar. Blend on medium speed until mixture is smooth.
  3. With blender running, slowly pour in olive oil in a thin stream until all is incorporated. Adjust seasoning with salt and pepper if desired. Use warm or chill for later use.
