Roasted Okra with Spiced Yogurt

Ingredients
- 2 Garlic cloves
- 2 tbsp Lemons, juiced
- 1 cup Whole milk plain yogurt
- 1 tsp Dried oregano
- 2 lb Fresh okra
- 1 tsp Ground coriander
- 1 tsp Black pepper grinder, plus more as needed
- 1 tsp Kosher salt, plus more as needed
- 1 tbsp Lightly dried chili pepper
- 1/2 cup Extra virgin olive oil, divided use
- 1/3 cup Fresh mint, leaves tightly packed
- 1 tsp Ground cumin
Instructions
- Preheat oven to 400ºF.
- Make dipping sauce by adding yogurt, coriander, cumin, oregano, lemon juice, pepper flakes, garlic, mint, and half of olive oil.
- Blend until smooth and season to taste as needed. Refrigerate until ready to use.
- In a bowl, combine okra, salt, pepper and remaining olive oil, toss to coat and place on a sheet pan. Roast in oven 30 to 45 minutes or until nicely browned and okra are tender.
- Allow to cool slightly and serve with dipping sauce.
