Roasted Okra with Spiced Yogurt

Ingredients

  • 2 Garlic cloves
  • 2 tbsp Lemons, juiced
  • 1 cup Whole milk plain yogurt
  • 1 tsp Dried oregano
  • 2 lb Fresh okra
  • 1 tsp Ground coriander
  • 1 tsp Black pepper grinder, plus more as needed
  • 1 tsp Kosher salt, plus more as needed
  • 1 tbsp Lightly dried chili pepper
  • 1/2 cup Extra virgin olive oil, divided use
  • 1/3 cup Fresh mint, leaves tightly packed
  • 1 tsp Ground cumin

Instructions

  1. Preheat oven to 400ºF.
  2. Make dipping sauce by adding yogurt, coriander, cumin, oregano, lemon juice, pepper flakes, garlic, mint, and half of olive oil.
  3. Blend until smooth and season to taste as needed. Refrigerate until ready to use.
  4. In a bowl, combine okra, salt, pepper and remaining olive oil, toss to coat and place on a sheet pan. Roast in oven 30 to 45 minutes or until nicely browned and okra are tender.
  5. Allow to cool slightly and serve with dipping sauce.
