Roasted Okra Masala

Unsaved Roasted Okra Masala

Ingredients

  • 1 lb Fresh okra, washed and patted dry
  • 1/2 tsp Turmeric
  • 1/2 tsp Garam masala
  • 1/2 tsp Chili powder
  • 1 tsp Garlic powder
  • 1/2 tsp Ground cumin
  • 1/4 cup Extra virgin olive oil, you can use melted ghee if desired

Instructions

  1. Preheat oven to 400˚F.
  2. Place okra into a bowl along with turmeric, garam masala, chili powder, garlic powder and cumin. Add olive oil and toss everything to coat.
  3. Season with a generous pinch of salt and pepper, and place onto a sheet pan. Roast 25 to 30 minutes or until nicely browned.
  4. Once roasted, place okra into a serving dish, serve with some spiced yogurt or a drizzle of fresh lemon juice and mint if desired.
