Roasted Mushroom Tostadas

Ingredients
- 4 Low carb flour tortillas, plus more as needed
- 16 oz Sliced baby bella mushrooms
- 1 tbsp Fresh garlic cloves, minced fine or zested
- 1 tsp Ground cumin
- 1/3 cup Fresh cilantro, chopped fine
- 1 tbsp Fresh thyme, leaves only, stems removed
- 1/4 cup Extra virgin olive oil
- 1 tbsp Sherry vinegar
- 1 cup Fresh guacamole, plus more as needed
Instructions
- Preheat oven to 375F. Line a baking sheet with parchment paper. Place tortillas on parchment paper, and bake for 8 to 12 minutes or until tortillas are just crisp and lightly toasted. Remove and set aside. Keep oven on for mushrooms.
- In a bowl add mushrooms, garlic, cumin, cilantro, thyme sprigs, olive oil and red wine vinegar, toss together to combine.
- Place mushroom mixture into an oven safe 8" x 8" glass or ceramic dish and roast uncovered until mushrooms are nicely browned and roasted, about 25 to 30 minutes.
- To assemble tostadas, spread a little guacamole on each tostada then spoon mushroom mixture over each. Season to taste as desired.
- Repeat with any additional tostadas and garnish with your favorite hot sauce or condiments.
