Roasted Mediterranean Sheet Pan Chicken

Ingredients

  • 1 Seasoned chicken leg quarters, lemon pepper flavor
  • 1 Fresh Steak Night Vegetable Blend, with seasoning packet
  • 5 oz Grape tomatoes, cut in half
  • 1 oz Crumbled feta cheese

Instructions

  1. Preheat oven to 400ºF. Lay chicken quarters in a single layer around the edges of a rimmed sheet pan. Drizzle lightly with olive oil and rub on all sides. Cook for 20 minutes.
  2. While chicken is cooking, drizzle vegetable blend and tomatoes with a light coating of oil and toss with the seasoning packet.
  3. Remove pan with partially cooked chicken from oven and add vegetables to center of pan. Sprinkle with feta and return to oven. Cook for an additional 20 minutes or until chicken reaches an internal temperature of 165ºF.
