Roasted Lemon and Za'atar Chicken

Ingredients

  • 2 1/4 lb Whole chicken, rinsed and patted dry
  • 1 1/2 tbsp Za'Atar Seasoning, plus more as needed
  • 1 Medium fresh lemon, thinly sliced and seeds removed from slices
  • 1 tbsp Extra virgin olive oil, plus more as needed for drizzling

Instructions

  1. Place chicken in a roasting pan and truss if desired.
  2. Season liberally with za'atar seasoning and place lemon slices evenly over entire surface of chicken.
  3. Cover with plastic wrap and refrigerate for at least 2 hours or overnight is best.
  4. Preheat oven to 400˚F.
  5. When ready to roast, remove plastic and roast until internal temperature of chicken reads 170˚F. Approximately 1 1/2 hours.
  6. Once roasted, allow to rest then drizzle with olive oil, carve and serve.
  7. Season to taste as needed with salt and pepper.
