Roasted Jalapeño Salsa

Ingredients
- 10 Large jalapeño pepper, approximately 1 pound
- 1/3 cup Lime, fresh squeezed
- 1 1/2 cups Shallot, roughly chopped
- 1 cup Fresh cilantro, leaves tightly packed
Instructions
- Preheat broiler. Place oven rack 6 to 8 inches below broiler.
- Arrange jalapeños on a sheet pan without a liner, then place on rack under broiler. Turn peppers every few minutes until nicely charred and blistered.
- Once jalapeños are blistered, remove to a bowl, cover with plastic wrap and allow to steam for at least 10 minutes. Wearing gloves, peel the charred skin from the peppers.
- To make salsa, place lime juice, shallots, cilantro and jalapeños in a blender. Blend until smooth then season liberally with salt and pepper.
- Pour into a container and refrigerate until ready to use.
- Chef's Note: Sauce will continue to develop flavor as it sits. It's great simply used as a salsa or as a marinade. Keeps up to 5 days in the refrigerator.
