Roasted Green Beans with Mushrooms

Ingredients
- 12 oz Green beans
- 1 lb Cremini mushrooms, quartered
- 3 tbsp Extra virgin olive oil
- 1 tbsp Garlic cloves, minced
- 1/4 cup Shallots, julienned
- 1 cup Cherry tomatoes, whole
- 1/2 tsp Dried thyme
- 1/2 tsp Kosher salt
- 1/2 tsp Ground black pepper
Instructions
- Preheat oven to 450°F. Place sheet pan in oven.
- In a large bowl, mix all ingredients.
- Carefully remove sheet pan from oven and evenly pour seasoned vegetables on pan.
- Return to oven and cook 20 minutes or until mushrooms are browned and tomatoes are well charred.
