Roasted Green Beans with Mushrooms

Ingredients

  • 12 oz Green beans
  • 1 lb Cremini mushrooms, quartered
  • 3 tbsp Extra virgin olive oil
  • 1 tbsp Garlic cloves, minced
  • 1/4 cup Shallots, julienned
  • 1 cup Cherry tomatoes, whole
  • 1/2 tsp Dried thyme
  • 1/2 tsp Kosher salt
  • 1/2 tsp Ground black pepper

Instructions

  1. Preheat oven to 450°F. Place sheet pan in oven.
  2. In a large bowl, mix all ingredients.
  3. Carefully remove sheet pan from oven and evenly pour seasoned vegetables on pan.
  4. Return to oven and cook 20 minutes or until mushrooms are browned and tomatoes are well charred.
