Roasted Garlic Pepper Vegetable Medley

Ingredients
- 10 oz Asparagus, 1-2 inches of bottom trimmed
- 1/2 Medium yellow onion, large diced
- 10 oz Cauliflower florets
- 1 Medium red bell pepper, stem and seeds removed, large diced
- 4 cups Baby bella mushrooms, quartered
- 1/4 cup Extra virgin olive oil
- 2 tsp Garlic pepper
Instructions
- Preheat oven to 350ºF. Spray a baking sheet with non-stick spray and set aside.
- Place vegetables in a large bowl then drizzle with olive oil and toss to coat. Sprinkle with seasoning and toss to coat.
- Spread the vegetables out in a single layer on prepared pan and roast until fork tender (about 15 to 18 minutes).
