Roasted Chicken with Garlic & Tomatoes

Serves 4

Ingredients

  • 1 lb Boneless, skinless chicken breasts
  • 1 tbsp Olive oil, divided use
  • 1/2 tsp Salt
  • 1 tsp Ground black pepper
  • 1 tsp Dried thyme leaves
  • 1 Fresh garlic clove(s), rough chopped
  • 2 cups Kale
  • 5 Roma tomatoes, halved
  • 1 Lemon(s), juiced
  • 2 tbsp Sherry wine

Instructions

  1. Preheat oven to 375ºF.
  2. Place a large cast iron pan over medium-high heat.
  3. Brush chicken with 1/2 tablespoon olive oil and season with salt, pepper and thyme.
  4. Add to preheated pan and sear on all sides until a nice golden crust forms. Remove from pan and set aside briefly.
  5. Add remaining oil to same pan with garlic, kale, tomatoes, lemon juice and sherry wine.
  6. Top with cooked chicken and bake 45 minutes or until chicken has reached 165ºF.
