Roasted Chicken with Garlic & Tomatoes

Ingredients
- 1 lb Boneless, skinless chicken breasts
- 1 tbsp Olive oil, divided use
- 1/2 tsp Salt
- 1 tsp Ground black pepper
- 1 tsp Dried thyme leaves
- 1 Fresh garlic clove(s), rough chopped
- 2 cups Kale
- 5 Roma tomatoes, halved
- 1 Lemon(s), juiced
- 2 tbsp Sherry wine
Instructions
- Preheat oven to 375ºF.
- Place a large cast iron pan over medium-high heat.
- Brush chicken with 1/2 tablespoon olive oil and season with salt, pepper and thyme.
- Add to preheated pan and sear on all sides until a nice golden crust forms. Remove from pan and set aside briefly.
- Add remaining oil to same pan with garlic, kale, tomatoes, lemon juice and sherry wine.
- Top with cooked chicken and bake 45 minutes or until chicken has reached 165ºF.
