Roasted Chicken Thighs with Pesto

Serves 6
Ingredients
- 1 cup Fresh basil
- 1 Garlic cloves
- 1 tbsp Chopped walnuts
- 1/4 cup Grated Parmesan cheese
- 1 Lemons, juiced and zested
- 1/4 cup Extra virgin olive oil
- 6 Bone in chicken thighs
- 1/2 tbsp Kosher salt
- 1 tsp Ground black pepper
Instructions
- Preheat oven to 400ºF.
- Line a sheet pan with foil. Set aside.
- In a blender or food processor combine basil, garlic, walnuts, cheese, lemon juice, zest and pulse until smooth, then slowly add in olive oil.
- Place chicken thighs onto sheet pan and coat generously with pesto.
- Season with salt and pepper and place in oven. Cook 15 minutes until chicken has reached an internal temperature of 165ºF.
- Serve with salad rice or potatoes.
