  • 1 Large head of cauliflower, chopped into florets
  • 2 tbsp Extra virgin olive oil
  • 1 tsp Kosher salt, plus more as needed to taste
  • 1 tsp Ground black pepper, plus more as needed to taste
  • 12 oz Culinary Cowgirls Queso Blanco
  • 1 tbsp Fresh chives, chopped

Instructions

  1. Preheat oven to 400ºF.
  2. In a large bowl, combine cauliflower florets with olive oil, salt and pepper. Toss to coat, and place on a sheet pan.
  3. Roast for 35 to 45 minutes or until cauliflower is slightly soft and caramelized. Allow to sit while prepping cheese.
  4. In a non stick pan or using a microwave, heat queso.
  5. Place cauliflower into a serving dish, pour hot cheese evenly over cauliflower and garnish with fresh chives.
