Roasted Brussels with Shallot Vinaigrette

Ingredients

  • 1 lb Brussels sprouts, cut in half
  • 5 tbsp Extra virgin olive oil, divided use
  • 1 tbsp Kosher salt
  • 1 tsp Ground black pepper
  • 1/3 cup Rice vinegar
  • 2 tbsp Wildflower Honey
  • 1 1/2 tsp Dijon mustard
  • 2 tsp Shallot, finely diced

Instructions

  1. Preheat oven to 425°F.
  2. In a large bowl, combine Brussels sprouts, 2 tablespoons extra virgin olive oil, salt and pepper. Toss well, massaging oil and seasoning into Burssels. Spread out on a sheet tray and roast 15 minutes.
  3. Meanwhile, make vinaigrette. In a small bowl, whisk together vinegar and honey followed by mustard. Slowly pour in remaining oil while whisking continually. Add shallots, and set aside.
  4. Remove Brussels sprouts from oven and cool down slightly, about 5 minutes. Transfer to a large bowl, pour vinaigrette over the top and toss. Serve immediately.
