Roasted Broccoli Mole

Ingredients
- 9 oz Fresh broccoli florets
- 3 Medium tomatillo(s), husks removed, approximately 3 to 4 oz.
- 1 cup White onion, roughly chopped
- 3 Serrano pepper(s), stem and seeds removed, or keep seeds for extra spice
- 5 Peeled Garlic Cloves, crushed
- 2 tsp Cumin seeds
- 1/4 cup Extra virgin olive oil
- 1 cup Fresh cilantro, leaves and tender stems only, tightly packed
- 1/3 cup Fresh mint, leaves only tightly packed, approximately 1 oz
- 1/3 cup Roasted salted pumpkin seeds
- 1/4 cup Tahini paste
- 1/3 cup Water
Instructions
- Preheat oven to 400ºF. Line a sheet pan with foil and set aside.
- In a bowl combine broccoli, tomatillos, white onions, serrano peppers, garlic and cumin seeds.
- Add olive oil and a liberal pinch of salt and pepper and toss to coat. Spread out on prepared sheet pan.
- Roast for 30 to 40 minutes or until everything is nicely browned and caramelized. Remove from oven and cool completely.
- Transfer contents of pan and all collected juices into a food processor along with cilantro, mint, pumpkin seeds, tahini and water.
- Pulse until smooth and season to taste. Serve over chicken, grilled fish or as a dip for vegetables.
