Roasted Beet and Quinoa Chopped Salad

Unsaved Roasted Beet and Quinoa Chopped Salad

Ingredients

  • 1 Red beets, approximately 2 to 3 beets, 12 to 16 oz
  • 2 tbsp Extra virgin olive oil, plus more as needed
  • 9 oz Romaine salad
  • 1/2 cup Crumbled goat cheese, plus more as needed
  • 1 cup Quick Heat White & Red Quinoa, cooked to package instructions and cooled
  • 1/2 cup Dried cranberries, plus more as needed
  • 1/2 cup Glazed Pecans, plus more as needed

Instructions

  1. Preheat oven to 375ºF.
  2. Place beets on foil, drizzle with olive oil and add a pinch of salt and pepper.
  3. Tightly wrap foil around beets and place on a sheet pan. Roast until very tender when poked with a toothpick, 45 to 60 minutes depending on size.
  4. Cool beets to room temperature then use a paper towel to wipe off skins. Dice or cube and set aside.
  5. Assemble salad by placing romaine chopped salad base into a bowl. Add goat cheese, quinoa, cranberries, pecans and chopped beets.
  6. Toss well with your favorite dressing and season to taste.
  7. Chef's Note: H-E-B Whole Canned Beets can be substituted for fresh beets. For a great dressing, use White Balsamic Vinaigrette, recipe available on heb.com.
