Serves 6

Ingredients

  • 3 tbsp Extra virgin olive oil, plus more as needed to garnish soup
  • 1 tbsp Peeled garlic cloves, minced
  • 1 cup Fresh diced savory vegetables
  • 1 qt Kale greens, roughly chopped
  • 24.3 oz Tuscan sauce
  • 15.5 oz Canned cannellini beans, drained
  • 2 cups Chicken bone broth
  • 3 cups Artisan ciabatta bread, cubed

Instructions

  1. Place a large Dutch oven or pot with a tight fitting lid over medium heat. Add oil and allow to get hot.
  2. Add garlic, diced vegetables, kale and a pinch of salt and pepper. Stir-fry 5 to 7 minutes before adding Tuscan sauce, beans and broth.
  3. Bring to a simmer then add bread cubes, cover and reduce heat to medium-low. Allow to cook 10 minutes. Season to taste.
  4. For serving, drizzle soup with a little olive oil and garnish with Parmesan cheese as desired.
