Reverse Sear New York Strip

Ingredients
- 1 1/2 lb Dry aged New York strip steaks, approximately two 3/4 pound steaks
Instructions
- Preheat oven to 275ºF. Place a cast iron skillet over medium heat and allow to get very hot.
- Season steaks liberally on both sides with salt and pepper. Place on a sheet pan fitted with a wire rack and set aside at room temperature for at least 30 minutes.
- Let steaks sit at room temperature for at least 30 minutes.
- Place an oven safe probe thermometer into end of thickest steak so tip of thermometer reaches center of steak.
- Place in oven and cook until thermometer reaches 100ºF. Remove steaks from oven, remove probe and place steaks into hot cast iron pan.
- Sear steaks for 4 to 5 minutes for proper caramelization then flip and continue cooking until steaks have an internal temperature of around 125ºF to 130ºF.
- Remove steaks to a plate or platter to rest, season again with salt and pepper as needed and serve.
- Chef's Note: This temperature cooks the steaks to a more medium-rare to medium.
