Unsaved Refried Black Bean Queso Fundido

Ingredients

  • 16 oz Refried black beans
  • 1 Peeled garlic cloves, minced or zested, approximately 1 ounce
  • 1/2 tsp Ground cumin
  • 2 tbsp Limes, fresh juice
  • 1 tbsp Extra virgin olive oil
  • 2 cups H‑E‑B Mi Comida Shredded Quesadilla Cheese

Instructions

  1. Preheat oven to 400˚F.
  2. Combine refried black beans into a bowl along with garlic, cumin, lime juice and oil.
  3. Whisk everything together to fully incorporate. Season to taste and set aside.
  4. Pour black bean puree evenly into a small oven safe casserole dish. Cover beans completely with cheese.
  5. Bake for 10 to 15 minutes or until cheese is nicely browned and bubbly. Allow to cool slightly before serving with chips or tortillas.
