Ingredients
- 12 oz Roasted piquillo peppers, drain liquid from peppers
- 2 Large jalapeños, (or red jalapeño or fresno peppers) stem and seeds removed, leave seeds for a spicier Zhoug
- 4 cloves Garlic, crushed
- 1 cup Fresh cilantro, tightly packed
- 1 tbsp Smoked paprika
- 1/4 cup Fresh squeezed lemon juice
- 2 tsp Ground cumin, toasted
- 1/2 tsp Caraway seeds, lightly toasted
- 3/4 cup Plain whole milk yogurt
- 1/3 cup Extra virgin olive oil
Instructions
- In a blender, combine all ingredients and puree until smooth. Season to taste.
- Cover and refrigerate for at least 30 minutes to allow flavors to set up. Raita will keep up to 5 days covered in the fridge.
