Red Velvet Cupcakes

Ingredients

  • 1 Red velvet cake mix
  • 1/2 cup Reduced fat cream cheese
  • 1/4 cup Salted butter, softened
  • 2 cups Powdered sugar
  • 1/3 cup 2% milk
  • 1/4 tsp Peppermint oil
  • 2 tbsp Crushed peppermint candy

Instructions

  1. Prepare and bake red velvet cupcakes according to package directions.
  2. Beat cream cheese and butter with a hand mixer at medium speed until smooth and creamy.
  3. Lower speed, and gradually add powdered sugar alternately with milk; add peppermint oil.
  4. Place icing in a zip-top bag, and cut corner; pipe icing onto cupcakes, then top each with crushed candy canes.
