Red Quinoa Salad with Mixed Greens and Berry Vinaigrette

Ingredients

  • 1 cup Quick Heat White & Red Quinoa
  • 2 cups Low sodium vegetable broth
  • 1 tsp Dijon mustard
  • 1/2 tsp Fresh garlic clove(s), minced
  • 2 tbsp Sherry vinegar
  • 2 tbsp Extra virgin olive oil
  • 2 tbsp Lemon(s), juiced
  • 1 cup Fresh blueberries
  • 5 oz Fresh super greens
  • 1/4 cup Almonds, chopped
  • 1 cup Strawberries, quartered
  • 1 cup Blackberries, halved
  • 1/4 tsp Kosher Salt
  • 1/4 tsp Ground Black Pepper

Instructions

  1. Cook quinoa in vegetable stock according to package directions. Remove from heat and set aside.
  2. To make vinaigrette, combine mustard, garlic, sherry vinegar, olive oil, lemon juice and blueberries in a blender. Pulse until smooth.
  3. Combine mixed greens, almonds, strawberries and blackberries in a large bowl and mix well.
  4. Add vinaigrette and toss to coat.
  5. Garnish with additional blueberries and season with salt and pepper before serving.
