Red & Green Striped Roll Out Cookies

Ingredients

  • 4 oz Salted Butter, softened
  • 1 cup Pure Cane Sugar
  • 1 Large eggs
  • 1/2 tsp Almond extract
  • 1/2 tsp Vanilla Extract
  • 1 tsp Kosher Salt
  • 1/2 tsp Double Acting Baking Powder
  • 2 1/2 cups Unbleached All Purpose Flour
  • 1 Red & green food coloring

Instructions

  1. Combine butter and sugar in a food processor and pulse until smooth. Add egg, both extracts and salt; continue to pulse until combined. Add in baking powder followed by flour in 1 cup increments, pulsing in between until a dough ball forms.
  2. Divide dough into 3 equal portions and place in 3 separate bowls. Add green coloring to one bowl, red to a second, and no color to the third. Add enough of each color to dough and knead until desired tone is reached.
  3. Place each dough ball into a plastic bag and refrigerate for 30 to 45 minutes.
  4. Preheat oven to 325°F. Remove dough to a floured work space. To create striped pattern, divide each dough ball into 4 equal portions and roll out into coils (or strips or rope) about 6 to 8 inches. Place dough coils on floured work surface, alternating colors as you go. You should have 12 coils laid out.
  5. Place a piece of wax paper or parchment over dough. Using a rolling pin, roll dough out to about 1/4-inch. The doughs should come together but not blend completely.
  6. Using your favorite cookie cutter, cut out shapes. Place on cookie sheet and bake for 10 to 11 minutes, be careful not to overbake as the colors will brown excessively.
