Red Curry Pork Tenderloin

Unsaved Red Curry Pork Tenderloin

Ingredients

  • 1 tbsp Canola oil
  • 1 lb Pork tenderloin, thinly sliced
  • 1/2 White onions, julienned
  • 1 Red bell peppers, cored, seeded and julienned
  • 1/2 cup Fresh cilantro, chopped
  • 1 cup Green onions, chopped
  • 1/4 cup Peanut butter
  • 1/4 cup Red curry paste
  • 1 cup Lite coconut milk
  • 1 tbsp Lime, juiced

Instructions

  1. Heat oil in large non-stick skillet. Add pork tenderloin and cook until well browned.
  2. Add onions, red bell pepper, cilantro and green onions. Cook for an additional 4 minutes stirring constantly.
  3. Stir in peanut butter, curry paste, coconut milk and lime juice. Bring skillet up to a simmer then reduce heat. Simmer for an additional 5 minutes then serve with jasmine rice.
