Red Curry Pork Tenderloin

Serves 6
Ingredients
- 1 tbsp Canola oil
- 1 lb Pork tenderloin, thinly sliced
- 1/2 White onions, julienned
- 1 Red bell peppers, cored, seeded and julienned
- 1/2 cup Fresh cilantro, chopped
- 1 cup Green onions, chopped
- 1/4 cup Peanut butter
- 1/4 cup Red curry paste
- 1 cup Lite coconut milk
- 1 tbsp Lime, juiced
Instructions
- Heat oil in large non-stick skillet. Add pork tenderloin and cook until well browned.
- Add onions, red bell pepper, cilantro and green onions. Cook for an additional 4 minutes stirring constantly.
- Stir in peanut butter, curry paste, coconut milk and lime juice. Bring skillet up to a simmer then reduce heat. Simmer for an additional 5 minutes then serve with jasmine rice.
