Red Beans and Rice

Ingredients
- 1 Andouille sausage link, sliced rounds
- 1 cup Yellow onions, diced
- 1/2 cup Celery stalks, diced
- 1 cup Green pepper(s), diced
- 1 tbsp Garlic cloves, minced
- 1 lb Red Kidney Beans
- 1 tbsp Cajun Seasoning
- 1 tbsp Louisiana Hot Sauce
- 2 tbsp Worcestershire Sauce
- 1 Bay leaves
- 3 cups Reduced Sodium Chicken Broth
- 2 cups White rice, prepared according to package directions
- 2 tbsp Green onions, sliced
- 1 Instant Pot Duo
Instructions
- Turn Instant Pot onto 'Sauté' setting. Once heated, add sausage and cook 4 to 5 minutes stirring frequently. Add onions, celery, bell peppers, and garlic and cook 2 to 3 minutes.
- Stir in red beans and add Cajun seasoning, hot sauce, Worcestershire and bay leaf. Stir to combine then add chicken broth.
- Place Instant Pot lid on, seal and set to 'Manual Setting'. Set timer to 25 minutes for pre-soaked dry red beans or 60 minutes for dry red beans. While cycle runs, prepare rice according to package directions.
- When cycle finishes, uncover and stir in green onions. To serve, place rice in bowl and ladle red bean mixture on top.
