Raw Beet & Carrot Salad with Dill and Mint

Ingredients
- 2 cups Fresh red or gold beets, approximately 3 medium-sized beets or 1 bunch, tops trimmed and beets peeled
- 20 oz Julienned carrots
- 1/2 cup Fresh mint, chopped
- 1/3 cup Fresh dill, chopped
- 1 tbsp Peeled Garlic Cloves, minced fine or zested
- 1/4 cup Fresh lemons, juiced
- 1/4 cup Extra virgin olive oil
- 1 tsp Ground cumin, lightly toasted, optional
Instructions
- Grate raw beets into a bowl lined with paper towels. Squeeze out any excess water or moisture.
- Place all ingredients in a large bowl, toss well to combine and season to taste.
- Cover and let sit for at least 30 minutes (or longer) to allow flavors to meld. Salad is best made in advance.
- Chef's Note: Adding chopped jalapeños is a great addition to turn up the flavor and spice.
