Unsaved Raw Beet & Carrot Salad with Dill and Mint

Ingredients

  • 2 cups Fresh red or gold beets, approximately 3 medium-sized beets or 1 bunch, tops trimmed and beets peeled
  • 20 oz Julienned carrots
  • 1/2 cup Fresh mint, chopped
  • 1/3 cup Fresh dill, chopped
  • 1 tbsp Peeled Garlic Cloves, minced fine or zested
  • 1/4 cup Fresh lemons, juiced
  • 1/4 cup Extra virgin olive oil
  • 1 tsp Ground cumin, lightly toasted, optional

Instructions

  1. Grate raw beets into a bowl lined with paper towels. Squeeze out any excess water or moisture.
  2. Place all ingredients in a large bowl, toss well to combine and season to taste.
  3. Cover and let sit for at least 30 minutes (or longer) to allow flavors to meld. Salad is best made in advance.
  4. Chef's Note: Adding chopped jalapeños is a great addition to turn up the flavor and spice.
