Rao's Italian Style Shrimp, & Grits

Ingredients

  • 24 oz Rao's Homemade Roasted Garlic Pasta Sauce
  • 1 1/2 lb Shrimp 16/20ct peeled & deveined
  • 1 Small red onion, Diced
  • 1 Small yellow onion, Diced
  • 1 Red pepper, Seeds removed and diced
  • Fresh jalapeno, Seeds removed and diced
  • 2 stalks Fresh celery, Small stalk diced
  • 6 oz Smoked chicken andouille sausage
  • 8 oz Chicken broth, unsalted
  • 2 bunches Green onion stalks, Fine chopped for garnish
  • 1/4 cup Olive oil
  • 2 tbsp Smoked paprika
  • 1/4 tsp Cayenne pepper
  • 1 pinch Salt & pepper

Instructions

  1. Working in a large pot, heat the oil over medium high heat.
  2. Add the andouille sausage pieces and sauté them to render some of their fat and also to crisp them up.
  3. As the andouille begins to render, add the red and yellow onions, red bell pepper, celery and jalapeno to the pot and sauté until the vegetables are translucent and tender.
  4. Add the smoked paprika and cayenne and continue to cook to allow the spices to bloom and cook out.
  5. Add the chicken broth to deglaze the pot.
  6. Now, add the Rao’s Roasted Garlic Marinara and bring to a simmer.
  7. Next, add the shrimp and lower the heat. Allow the shrimp to cook through in the sauce.
  8. Finally, sprinkle in the green onions, stir.
  9. Serve over Creamy Grits or Rice.
