Ranchero Green Beans

Ingredients
- 1 tbsp Jalapeño pepper, seeded and chopped
- 1/2 cup White onion
- 14.5 oz Green beans, drained
- 2 Bacon slices
- 1/2 cup Roma tomatoes, chopped
- 1 Garlic Clove, peeled and chopped
Instructions
- Cook bacon in a large skillet over medium-high heat for 3-4 minutes or until crisp.
- Place bacon on paper towels to drain.
- Chop bacon and set aside for later use.
- Drain bacon fat from skillet, reserving 1 teaspoon in skillet for cooking.
- Heat bacon fat in skillet over medium-high heat.
- Add onion, garlic, tomato and jalapeño.
- Cook 2-3 minutes, stirring occasionally.
- Add green beans and 2 tablespoons water; stir to combine.
- Season with salt and pepper.
- Reduce heat to medium-low and cook uncovered 4 more minutes.
- Place green beans in serving dish and top with chopped bacon.
