Ranchero Green Beans

Unsaved Ranchero Green Beans

Ingredients

  • 1 tbsp Jalapeño pepper, seeded and chopped
  • 1/2 cup White onion
  • 14.5 oz Green beans, drained
  • 2 Bacon slices
  • 1/2 cup Roma tomatoes, chopped
  • 1 Garlic Clove, peeled and chopped

Instructions

  1. Cook bacon in a large skillet over medium-high heat for 3-4 minutes or until crisp.
  2. Place bacon on paper towels to drain.
  3. Chop bacon and set aside for later use.
  4. Drain bacon fat from skillet, reserving 1 teaspoon in skillet for cooking.
  5. Heat bacon fat in skillet over medium-high heat.
  6. Add onion, garlic, tomato and jalapeño.
  7. Cook 2-3 minutes, stirring occasionally.
  8. Add green beans and 2 tablespoons water; stir to combine.
  9. Season with salt and pepper.
  10. Reduce heat to medium-low and cook uncovered 4 more minutes.
  11. Place green beans in serving dish and top with chopped bacon.
