Unsaved Quinoa Kale Waffle Frittata

Ingredients

  • 8.8 oz Quick heat white and red quinoa, cooked according to package directions
  • 3 Large eggs, beaten
  • 2 cups Kale greens, chopped
  • 1/4 cup Shredded parmesan cheese, grated
  • 1/2 tsp Garlic powder

Instructions

  1. Bring a waffle iron to medium heat and lightly spray with non-stick spray.
  2. Combine quinoa, eggs, kale, Parmesan cheese and garlic powder in a bowl.
  3. Scoop 3/4 cup of mixture into the waffle iron and cook 4 to 5 minutes. Remove waffle frittata and repeat until all mixture is cooked.
  4. Serve immediately.
