Quinoa Breakfast Scramble

Serves 4
Ingredients
- 1 tbsp Extra virgin olive oil
- 1 cup Tomato, diced
- 2 cups Baby spinach
- 1 cup Quinoa, cooked
- 4 Large eggs, beaten
- 1/4 cup Shredded parmesan cheese
Instructions
- Heat olive oil in a large skillet on medium. Add tomatoes and cook 3 to 4 minutes.
- Toss in spinach and sauté until wilted and most of liquid is gone.
- Add quinoa and continue to cook 2 minutes.
- Stir in beaten eggs and cook, stirring gently, until just firm.
- Divide among 4 bowls, sprinkle with cheese and enjoy!
