Quick Taco Salad

Serves 3
Ingredients
- 1 tbsp Extra virgin olive oil
- 3.3 oz Meatless crumbles southwest seasoned
- 9 oz Chopped Romaine
- 2 cups Shredded cabbage
- 1/2 cup Colby Jack cheese, shredded, plus more as needed
- 1/3 cup Grape tomatoes, sliced in half
- 1/4 cup Green onion, diced
- 1/2 cup Avocado, diced into chunks
- 1/3 cup Tomatillo salsa, or as needed for dressing
Instructions
- Add oil to a sauté pan and follow package instructions for rehydrating and cooking crumbles. Remove from heat and allow to cool slightly.
- Add oil and taco crumbles sauté until crumbles are just starting to crisp up. Approximately 5 to 7 minutes.
- Remove from heat and allow crumbles to cool slightly.
- While meat cools combine lettuce, cabbage, cheese, tomatoes, green onions and avocado together in a serving bowl.
- Add meatless crumbles and salsa, toss gently and season to taste.
- Chef's Note: Customize your add-ins to your tastes, pepitas add a nice crunch to garnish.
