Unsaved Quick Italian Cream Cake

Ingredients

  • 1/2 cup Shredded sweetened coconut
  • 17 oz White cake mix
  • 1 cup Half & half
  • 1/2 cup Sour cream
  • 2 oz Salted Butter, melted, approximately 1/2 a stick
  • 1/2 cup Chopped pecans, toasted pecans is preferred
  • 3 Large eggs

Instructions

  1. Preheat oven to 350*F. Grease or butter a 9x13 inch oven safe casserole dish and set aside.
  2. Using a stand mixer with a paddle attachment, combine all ingredients in mixing bowl and mix until a smooth, creamy batter is formed.
  3. Pour into prepared pan, spreading batter out to ensure even cooking.
  4. Bake for 30 to 40 minutes or until a toothpick inserted in center of cake pulls out clean. Cool for 20 to 25 minutes before frosting.
  5. Chef's Note: This cake traditionally gets a cream cheese frosting. But any vanilla frosting will do. For a homemade cream cheese frosting, "Scratch Cream Cheese Frosting" on heb.com is great.
