Quick Chipotle Chili

Ingredients

  • 1 cup White onion, chopped
  • 1 lb Ground pork 90% lean
  • 1 lb Ground bison
  • 2 tbsp Chipotle peppers in adobo, chopped
  • 15 oz Black beans
  • 2.8 oz Texas chili mix
  • 6 oz Tomato paste
  • 3 cups Chicken broth

Instructions

  1. In a large, heavy bottom pot over medium-high heat, cook onions, pork and bison about 7 to 10 minutes, using a wooden spoon to break up meat as it cooks.
  2. Once browned, add chipotle peppers in adobo, black beans, chili mix, tomato paste and chicken broth. Stir to combine.
  3. Cook uncovered over medium-low heat until slightly thickened and flavors come together.
  4. Season to taste with salt and pepper.
  5. Chef's Note: Top chili with cheese, onions, avocado, tortilla strips or your favorite toppings.
