Quick And Cheesy Enchiladas

Ingredients

  • 2 cups Easy Melt cheese, shredded
  • 15 oz Enchilada sauce
  • 2 Fresh jalapeno pepper(s), seeded and finely chopped
  • 1 Medium fresh white onion(s), chopped
  • 12 Yellow corn tortillas
  • 1 lb 93% lean ground beef

Instructions

  1. Heat oven to 400°F.
  2. Spray a 9 x 13 inch baking pan with nonstick cooking spray; set aside.
  3. Brown ground beef in a large skillet over medium high heat.
  4. Combine cooked ground beef onion, shredded cheese and jalapeño.
  5. Stir in half of red enchilada sauce, reserving the remaining sauce for later use.
  6. Set mixture aside.
  7. Heat tortillas until soft, then spread 1/4 cup enchilada mixture down the center of each tortilla and roll tightly, one at a time.
  8. Place in prepared baking dish in a single layer, seam side down.
  9. Spray enchiladas with nonstick cooking spray to keep moist during baking; set aside.
  10. Stir in the other half of the red enchilada sauce to the remaining enchilada mixture and pour over the center the enchiladas.
  11. Bake uncovered for 8-12 minutes or until cheese is bubbly on the edges and tortillas are golden.
  12. Serve immediately.
