Instructions

  1. Preheat oven to 350°F. Place a large skillet over medium-high heat.
  2. When skillet is hot, add oil and beef, breaking up large pieces as it cooks. Continue to cook until meat is no longer pink, about 6 to 8 minutes. Remove from pan and let drain.
  3. Meanwhile, spray a 9x13 inch baking dish with non-stick spray and evenly spread Spanish rice in the bottom. Set aside briefly.
  4. Wrap tortillas in a damp paper towel and microwave for 45 to 60 seconds.
  5. Place 1 to 2 tablespoons of cooked meat down the center of a tortilla. Roll up carefully and lay seam-side down on top of the rice. Repeat until all tortillas are used.
  6. Sprinkle frozen fajita vegetables over rolled tortillas. Pour queso over the top and spread to cover every enchilada.
  7. Cover pan with foil and bake 25 minutes. Remove foil and cook for another 15 minutes. Set aside to rest for 5 minutes prior to serving.
