Queso Covered Beef Enchiladas

Ingredients
- 1 tbsp Extra virgin olive oil
- 1 1/4 lb Mi Tienda Diced Beef Para Tacos de Bistec Norteño
- 15 oz Mi Tienda Spanish Rice
- 10 Ready to cook yellow corn tortillas
- 2 cups Frozen fajita vegetables blend
- 16 oz Hatch green chili queso
Instructions
- Preheat oven to 350°F. Place a large skillet over medium-high heat.
- When skillet is hot, add oil and beef, breaking up large pieces as it cooks. Continue to cook until meat is no longer pink, about 6 to 8 minutes. Remove from pan and let drain.
- Meanwhile, spray a 9x13 inch baking dish with non-stick spray and evenly spread Spanish rice in the bottom. Set aside briefly.
- Wrap tortillas in a damp paper towel and microwave for 45 to 60 seconds.
- Place 1 to 2 tablespoons of cooked meat down the center of a tortilla. Roll up carefully and lay seam-side down on top of the rice. Repeat until all tortillas are used.
- Sprinkle frozen fajita vegetables over rolled tortillas. Pour queso over the top and spread to cover every enchilada.
- Cover pan with foil and bake 25 minutes. Remove foil and cook for another 15 minutes. Set aside to rest for 5 minutes prior to serving.
