Purple Potato & Bacon Breakfast Hash

Ingredients

  • 12 oz H-E-B Natural Pecan Smoked Uncured Bacon, diced
  • 1 lb Purple potatoes, diced small or cubed
  • 1 cup White onion(s), julienned or thinly sliced
  • 1 Large red bell pepper, cored, seeded and thin sliced or julienned
  • 2 H-E-B Peeled Garlic Cloves, minced
  • 1/4 cup Patty's Herbs Chives, roughly chopped

Instructions

  1. Place a non-stick skillet over medium-high heat, add bacon and cook until fat is just starting to render.
  2. Add potatoes and stir-fry 10 to 12 minutes or until they just start to soften. Stir in onions, peppers and garlic and stir-fry until nicely caramelized.
  3. Turn heat down to medium-low and continue to cook until potatoes are nicely browned and soft. Remove from heat, season to taste and add fresh chives to garnish.
  4. Chef's Note: Once hash is cooked, I like to top it with cheese and place it in the oven until nicely melted or top it with a sunny side up egg.
