Pumpkin Thyme Sorbet

Ingredients
- 1 1/2 cups Unsweetened almond milk
- 13 1/2 fl oz Organic coconut milk
- 15 oz Solid Pack Pumpkin
- 3/4 cup Coconut sugar
- 1 tsp Ground black pepper, crushed to release flavors
- 1 tsp Vanilla extract
- 1/2 tsp Ground cinnamon
- 1/4 tsp Ground nutmeg
- 1 tsp Sea salt
- 1 1/2 tbsp Extra Virgin Olive Oil
Instructions
- In a large bowl whisk almond milk, coconut milk, pumpkin puree, coconut sugar, thyme, vanilla extract, cinnamon, nutmeg and salt. Allow to sit for 30 minutes for flavors to infuse.
- Place pumpkin mixture in an ice cream maker and churn to desired thickness.
- In a slow thin stream add 1 tablespoon olive oil while finishing churning. Serve immediately or freeze until ready to serve.
- Chef's Tip: Crumble shortbread cookies and fresh thyme over the top for a gorgeous presentation. This recipe can also be made with homemade pumpkin puree.
