Pumpkin & Smoked Pancetta Penne

Serves 4

Ingredients

  • 2 cups Pumpkin, peeled, seeds removed and pumpkin cut in 1/2-inch pieces, divided
  • 1/2 Medium White onions, chopped
  • 1 1/2 tbsp Extra virgin olive oil
  • 4 oz Pancetta, cut 1/5-inch long and julienne
  • 1 Garlic cloves, minced
  • 1 tsp Fresh rosemary, minced
  • 1 tsp Fresh Italian parsley, minced
  • 16 oz Whole wheat penne pasta
  • 2 oz Parmesan fresh grated cheese
  • 1 tsp Balsamic vinegar

Instructions

  1. Boil 1 cup diced pumpkin with onion in a pan with just enough water to cover.
  2. When the pumpkin is cooked, drain water and whip pumpkin and onion until you obtain a cream like consistency. Set aside.
  3. On medium heat, add oil and fry the pancetta. When done, remove from the pan and add diced pumpkin and cook.
  4. After 2 minutes of cooking, add garlic, rosemary, parsley and pancetta to diced pumpkin. Once blended, add creamed pumpkin.
  5. Cook the pasta in boiling, salted water according to box instructions.
  6. When done, drain and add previously prepared sauce.
  7. Add grated Parmesan to each serving and drizzle with balsamic vinegar.
