Pumpkin & Smoked Pancetta Penne

Serves 4
Ingredients
- 2 cups Pumpkin, peeled, seeds removed and pumpkin cut in 1/2-inch pieces, divided
- 1/2 Medium White onions, chopped
- 1 1/2 tbsp Extra virgin olive oil
- 4 oz Pancetta, cut 1/5-inch long and julienne
- 1 Garlic cloves, minced
- 1 tsp Fresh rosemary, minced
- 1 tsp Fresh Italian parsley, minced
- 16 oz Whole wheat penne pasta
- 2 oz Parmesan fresh grated cheese
- 1 tsp Balsamic vinegar
Instructions
- Boil 1 cup diced pumpkin with onion in a pan with just enough water to cover.
- When the pumpkin is cooked, drain water and whip pumpkin and onion until you obtain a cream like consistency. Set aside.
- On medium heat, add oil and fry the pancetta. When done, remove from the pan and add diced pumpkin and cook.
- After 2 minutes of cooking, add garlic, rosemary, parsley and pancetta to diced pumpkin. Once blended, add creamed pumpkin.
- Cook the pasta in boiling, salted water according to box instructions.
- When done, drain and add previously prepared sauce.
- Add grated Parmesan to each serving and drizzle with balsamic vinegar.
