Pumpkin and Goat Cheese Frittata

Serves 6
Ingredients
- 2 tbsp Extra Virgin Olive Oil
- 3 cups Fresh pumpkin, peeled and diced into approximately 1/4 inch cubes
- 1 Medium yellow onion, small diced
- 3 Fresh garlic cloves, minced
- 1 tsp Kosher salt, plus more as needed
- 1 tsp Ground black pepper, plus more as needed
- 1/4 tsp Fresh nutmeg, grated, plus more as desired
- 6 Large eggs
- 1/2 cup Half & Half
- 4 oz Goat Cheese, crumbled
- 1/2 cup Parmesan Cheese, grated
- 1/4 cup Chives, chopped, as needed to garnish
Instructions
- Preheat oven to 350°F.
- In a large non-stick oven safe sauté pan set over medium high heat, add oil and pumpkin. Sauté for 8 to 10 minutes stirring constantly.
- Add onions, garlic, salt, pepper and nutmeg. Continue to cook for at least 10 to 12 more minutes or until pumpkin starts to soften and is slightly caramelized.
- Whisk eggs and half and half together until creamy. Add eggs to pan, stir with a spatula and turn off heat. Spread eggs evenly throughout pan to coat everything.
- Sprinkle on goat cheese, Parmesan and chives. Bake for 15 to 20 minutes or until eggs are set in middle and slightly browned.
- Remove and allow to cool before cutting and serving. Season to taste as needed.
