Unsaved Pulled Pork and Cauliflower Mushroom Pilaf

Ingredients

  • 12 oz Sauceless pulled pork
  • 1/2 cup No sugar added BBQ sauce
  • 8 oz Sliced baby bella mushrooms
  • 14 oz Cauliflower rice
  • 2 tbsp Green onions, green tops only, sliced thin

Instructions

  1. Microwave pulled pork according to package directions, then stir in barbecue sauce.
  2. Heat 1 Tablespoon of oil in a large skillet over medium-high heat. Add mushrooms and cook for 3 minutes. Stir in cauliflower rice and season with salt and pepper to taste.
  3. Serve pulled pork over cauliflower rice mixture and garnish with green onions.
