Unsaved Protein Power Pancakes made with Gluten Free Flour

Ingredients

  • 1 1/2 cups Almond flour
  • 1 1/2 cups Old fashioned oats
  • 3 Collagen peptides
  • 2 tbsp Flaxseed
  • 2 tsp Baking powder
  • 1 tsp Baking soda
  • 1/2 tsp Kosher salt
  • 3 Large eggs
  • 1 Medium bananas, very ripe, mashed well with a fork
  • 1 cup Almond milk
  • 1/2 tsp Ground cinnamon
  • 2 tbsp Medium amber maple syrup
  • 1 tbsp Grapeseed oil, or any neutral flavored oil, use in small amounts, as needed

Instructions

  1. Add almond flour, oatmeal, collagen peptides, flaxseed, baking powder, baking soda and salt to a blender or food processor. Pulse until texture is a fine powder.
  2. Add eggs, banana, almond milk, cinnamon and maple syrup. Blend just long enough to combine into a smooth batter.
  3. Heat a large skillet over medium heat. Add a small amount of oil and swirl to coat pan (add more as needed between batches). Pour or spoon batches of batter into hot pan and cook about 2 to 3 minutes on each side, or until brown (see Chef's note below).
  4. To serve, top with additional maple syrup and butter if desired.
  5. Chef's Note: These pancakes will be a darker brown than typical pancakes due to the almond flour and protein powder. This is totally normal.
