Pretzel Crusted Pork Schnitzel with Fresh Lemon

Ingredients
- 1 cup Potato Starch
- 5 Large Eggs, whisked
- 2 cups BBQ flavored gluten free pretzels, BBQ flavored
- 1 lb Ultra Thin Sliced Pork
- 1/2 tsp Kosher Salt
- 1/2 tsp Ground Black Pepper
- 2 tbsp Grapeseed Oil
- 1 Fresh Lemons, juiced
Instructions
- Set up 3 bowls for a breading station with potato starch in one, beaten eggs in the second, and crushed pretzels (processed to breadcrumb consistency) in the third.
- Season pork with salt and pepper. Dredge each piece in potato starch, then egg and finally crushed pretzels. Set on a sheet pan while repeating the process until all the pork has been breaded.
- Place a sauté pan on medium, add oil and heat until hot. Sear breaded pork in batches for about 1 minute per side or until breading is golden brown and crispy. Repeat until all the meat is cooked.
- While still warm drizzle fresh lemon juice over the cooked pork and serve immediately. Season with more salt and pepper to taste.
