Unsaved Power Protein Pancakes

Ingredients

  • 1 cup Central Market Bulgar & Red Quinoa Quick Cook Grains, prepared according to package instructions
  • 1 1/2 cups Whole wheat flour
  • 2 tsp Baking powder
  • 1 tsp Ground cinnamon
  • 1 tbsp Flaxseed
  • 2 tbsp Whey protein powder, vanilla flavor
  • 1 cup Bananas, smashed
  • 2 Large eggs, beaten
  • 1 cup H-E-B Select Ingredients MooTopia Lactose Free Fat Free Milk

Instructions

  1. In a large bowl, combine quinoa, flour, baking powder, cinnamon, flaxseed and protein powder.
  2. Add banana, eggs, and milk. Mix just until combined.
  3. Spray a medium-size skillet with non-stick cooking spray and place over medium heat.
  4. Using a 1/3 measuring cup, pour batter into skillet. Flip each pancake after cooking 3 to 4 minutes on each side or until batter starts to bubble.
  5. Chef's Tip: Top pancakes with 1 teaspoon syrup.
