Power Protein Pancakes

Ingredients
- 1 cup Central Market Bulgar & Red Quinoa Quick Cook Grains, prepared according to package instructions
- 1 1/2 cups Whole wheat flour
- 2 tsp Baking powder
- 1 tsp Ground cinnamon
- 1 tbsp Flaxseed
- 2 tbsp Whey protein powder, vanilla flavor
- 1 cup Bananas, smashed
- 2 Large eggs, beaten
- 1 cup H-E-B Select Ingredients MooTopia Lactose Free Fat Free Milk
Instructions
- In a large bowl, combine quinoa, flour, baking powder, cinnamon, flaxseed and protein powder.
- Add banana, eggs, and milk. Mix just until combined.
- Spray a medium-size skillet with non-stick cooking spray and place over medium heat.
- Using a 1/3 measuring cup, pour batter into skillet. Flip each pancake after cooking 3 to 4 minutes on each side or until batter starts to bubble.
- Chef's Tip: Top pancakes with 1 teaspoon syrup.
