  • 3/4 cup White onion, finely chopped
  • 3 cups Shredded hash browns, thawed
  • 1 cup Vegetable oil

Instructions

  1. Combine eggs, flour and onion in a medium-size bowl.
  2. Add hash browns and season with salt and pepper; stir to combine.
  3. Heat 1 cup oil in a large skillet over medium-high heat.
  4. Drop spoonfuls (about 2 tablespoons each) of the potato mixture in the skillet, then spread into 3-4 inch pancakes.
  5. Fry pancakes until browned on the bottom (1-2 minutes), reducing the heat to medium to prevent scorching.
  6. Turn pancakes and cook the second side until crisp.
  7. Remove potato pancakes from skillet and drain briefly on a single layer paper towel.
  8. Continue frying the remaining potato mixture, adding more oil as needed.
  9. Season potato pancakes with salt and pepper and serve with applesauce.
