Potato Breakfast Hash

Serves 4

Ingredients

  • 16 oz Frozen homestyle potatoes
  • 1/2 cup Bacon, diced small
  • 1/3 cup Bell peppers, diced
  • 1/3 cup White onion, sliced
  • 1 1/2 cups Colby Jack cheese, shredded, plus more as needed
  • 1/3 cup Fresh green onion, chopped or thinly sliced

Instructions

  1. Place bag of potatoes in microwave and cook according to package instructions. Let cool then slice into quarters. Set aside briefly.
  2. Place a large non-stick skillet over medium-high heat. Add bacon and cook until fat has rendered and bacon begins to cook, approximately 3 to 5 minutes.
  3. Add potatoes, peppers and onions and continue to stir-fry until potatoes and bacon are slightly browned and crispy.
  4. Add cheese and stir to just combine and melt. Remove from heat and garnish with green onions.
  5. Season to taste as needed and serve hot.
  6. Chef's Note: Serve with a fried egg on top for a more complete meal.
