Potato Breakfast Hash

Serves 4
Ingredients
- 16 oz Frozen homestyle potatoes
- 1/2 cup Bacon, diced small
- 1/3 cup Bell peppers, diced
- 1/3 cup White onion, sliced
- 1 1/2 cups Colby Jack cheese, shredded, plus more as needed
- 1/3 cup Fresh green onion, chopped or thinly sliced
Instructions
- Place bag of potatoes in microwave and cook according to package instructions. Let cool then slice into quarters. Set aside briefly.
- Place a large non-stick skillet over medium-high heat. Add bacon and cook until fat has rendered and bacon begins to cook, approximately 3 to 5 minutes.
- Add potatoes, peppers and onions and continue to stir-fry until potatoes and bacon are slightly browned and crispy.
- Add cheese and stir to just combine and melt. Remove from heat and garnish with green onions.
- Season to taste as needed and serve hot.
- Chef's Note: Serve with a fried egg on top for a more complete meal.
