  • 1/4 cup Balsamic vinaigrette salad dressing, divided use
  • 1 1/4 lb Natural pork tenderloin
  • 16 oz Fresh sweet potatoes, brussels sprouts, diced onion & rosemary
  • 1 tbsp Extra virgin olive oil

Instructions

  1. Place half of balsamic dressing in a resealable plastic bag, add pork tenderloin, and seal bag. Marinate pork while grill heats to medium-high.
  2. When grill reaches desired temperature, remove pork from bag and grill on all sides to an internal temperature of 145ºF.
  3. While pork is cooking, place a large skillet over medium-high heat. Add oil and vegetables, toss to coat evenly, stir and cook for 10 minutes until edges start to brown.
  4. Reduce heat to medium, add 1/2 cup of water and remaining vinaigrette. Cover and cook until vegetables are tender, about 10 minutes.
  5. When pork is done, remove from grill, cover lightly with foil, and rest for 5 minutes before slicing. Serve with vegetables.
