Quick & easy:Pork Tenderloin with Rosemary Roasted Vegetables

Ingredients
- 1/4 cup Balsamic vinaigrette salad dressing, divided use
- 1 1/4 lb Natural pork tenderloin
- 16 oz Fresh sweet potatoes, brussels sprouts, diced onion & rosemary
- 1 tbsp Extra virgin olive oil
Instructions
- Place half of balsamic dressing in a resealable plastic bag, add pork tenderloin, and seal bag. Marinate pork while grill heats to medium-high.
- When grill reaches desired temperature, remove pork from bag and grill on all sides to an internal temperature of 145ºF.
- While pork is cooking, place a large skillet over medium-high heat. Add oil and vegetables, toss to coat evenly, stir and cook for 10 minutes until edges start to brown.
- Reduce heat to medium, add 1/2 cup of water and remaining vinaigrette. Cover and cook until vegetables are tender, about 10 minutes.
- When pork is done, remove from grill, cover lightly with foil, and rest for 5 minutes before slicing. Serve with vegetables.
