Unsaved Pork Pot Roast

Ingredients

  • 2 lb Pork loin, 2 to 3 lbs. will work
  • 1 tsp Kosher salt, plus more as needed
  • 1 tsp Ground black pepper, plus more as needed
  • 1 tsp Granulated garlic, plus more as needed to season roast
  • 1 1/2 cups White onion, thinly sliced or diced
  • 4 Fresh thyme, plus more as desired
  • 3 Bay leaves
  • 1 cup Petite sirah
  • 1 cup Chicken stock
  • 1 lb Baby gold potatoes
  • 12 oz Rainbow baby carrots

Instructions

  1. Season pork with salt, pepper, and granulated garlic on all sides.
  2. Add onions, thyme sprigs, and bay leaves to crockpot. Add pork then add red wine and chicken stock.
  3. Add potatoes and carrots and place lid on crockpot. Set temperature to low setting and allow to cook for 6 to 8 hours or until meat is very tender and pulls apart.
  4. Serve each portion with a drizzle of leftover juices. Season to taste as needed.
