Pork Milanesa Cemita

Serves 4
Ingredients
- 4 Sesame rolls
- 1/2 cup Panko plain bread crumbs, any style
- 1 lb Pork milanesa
- 1/4 cup Canola oil, as needed for pan frying
- 4 Jalapeno jack cheese, thin slices
- 1 cup Avocado, mashed
- 15 fl oz Mild enchilada sauce, warmed
- 1 cup Shredded cabbage
- 1/4 cup Fresh cilantro
Instructions
- Preheat oven to 400ºF. Cut rolls in half and toast in oven. Remove and set aside.
- Place bread crumbs in a shallow dish. Season pork to taste with salt and pepper then press firmly into bread crumbs.
- Set a large skillet over medium-high heat. Add oil and sear pork 1 to 2 minutes per side or until golden brown on both sides.
- Once all pork has been browned, remove to a sheet pan and top with cheese. Place in oven for a few minutes to melt cheese.
- To build cemitas, spread a layer of mashed avocado on bottom half of rolls, spoon enchilada sauce over avocado (or serve on the side if desired) then top with pork, cabbage, cilantro and a bit more sauce. Add top half of rolls and enjoy.
