Pork Loin Reuben Sandwich

Ingredients

  • 1 tbsp Grapeseed oil
  • 1 Seasoned lemon pepper pork loin
  • 8 slices Rye bread
  • 1 cup Sauerkraut, drained
  • 8 tbsp Thousand Island dressing
  • 4 slices Swiss cheese

Instructions

  1. Slice pork loin into sandwich style slices, the thinner the better.
  2. Heat oil in skillet over medium high heat. Pan fry pork slices until cooked through, 1 minute or less on each side.
  3. Lay out 8 slices of bread on a baking sheet. Spread 1 tablespoon of dressing on each slice.
  4. Top 4 slices with meat, 1/4 cup of sauerkraut and 1 slice of cheese. Top with remaining slice of bread.
  5. Return each sandwich to the skillet over medium high heat.
  6. Grill each sandwich on both sides until golden brown and cheese has melted.
