Pork and Pineapple Skewers

Ingredients

  • 2 Red bell pepper, cored, seeded and cut into 2 inch pieces
  • 1 Jumbo pineapple
  • 1/4 cup Orange juice
  • 1 lb Boneless pork center loin roast, cut into 2 inch pieces
  • 1 tsp Green ancho chili seasoning
  • 1 Medium Red onion, cut into 2 inch pieces
  • 1 tbsp Extra virgin olive oil

Instructions

  1. Preheat grill to medium heat.
  2. Soak wooden skewers in water.
  3. Peel and core pineapple, reserving any juice if possible, and cut into 2 inch chunks.
  4. Skewer pork, pineapple, onion, and bell pepper in an alternating pattern. Continue until all meat and veggies have been used.
  5. Place skewers into a 9 x 13 baking dish.
  6. Mix together pineapple juice, orange juice, ancho chili seasoning and olive oil.
  7. Marinate for 30 minutes in refrigerator, flipping once.
  8. Grill skewers for about 7 to 8 minutes per side, or until desired doneness is reached. Serve immediately.
